August Cooking Demo - Copper

In August, the Chardon Senior Center welcomed Heather Hill's awesome Chef, Jason, whose expertise and passion for nutrition illuminated the importance of copper in our diets.
Chef Jason's cooking demo, centered on copper-rich foods, shed light on the critical role this mineral plays in maintaining overall well-being. Copper, often overlooked, is an essential nutrient responsible for maintaining bone, heart, and immune health. One of its remarkable functions is enhancing the absorption of iron by red blood cells, ensuring that our bodies receive the oxygen they need to thrive. Copper also acts as a regulator, helping to stabilize blood pressure and heart rate, thus contributing to cardiovascular health. Another benefit copper provides is support for the development and functionality of our brains, promoting cognitive health and mental acuity.
The star of the meal was the lobster roll, served on a traditional New England-style roll, with lobster claw, knuckle, imitation, and langostino lobster meat. These ingredients were tossed together with fresh celery, carrots, green peppers, cider vinegar, mayonnaise, garlic, onion, and old bay seasoning. A fresh and flavorful baby spinach and mushroom salad complimented the meal with its tomatoes, cucumber, and mushrooms, and we chose a hot sweet bacon vinegarette. Our starch was Yukon Gold finger link potatoes quartered and tossed in garlic and parmesan cheese. The dessert was a two-fold dessert with cappuccino cheesecake topped with dark chocolate-dipped Oreo truffles.
